Camper
Hippea Camper is a foodtruck, so they are all around town. Check their social media for their weekly schedule. Since they are a small kitchen their menu is different every day, but they are entirely vegan and even watch out for white sugar, so you can choose from their entire menu. I'm listing some of their regular dishes.

They do carry gluten-free bread, however, if you have a gluten allergy, their sandwiches are made on the same cutting boards and cut with the same knives as gluten bread, so there will be cross-contact.

The Camper's signature housemade chickpea salad either on toast or with veggies and crackers to dip. There are three flavors of chickpea salad: original with dill, buffalo with spicy sauce, and Dixie Chick with nuts, fruit, and pickle relish.
