The staff are well trained to handle allergies and should be able to customize most salads to vegan. Note that their nuts often have butter.
Noodles are made to order so tofu can be added to any dish, as can other veggies.
All noodle dishes can be prepared with gluten-free noodles - either Asian style rice noodles, or gluten-free penne. Tell the cashier that you have an allergy for special care.
